June 7, 2010 Dinner - Enchilada Salad!


Dinner was freaking awesome tonight! Recipe was super simple:

Natural Ground Beef (not grass fed, but had no hormones or antibiotics)
Diced onion, diced green pepper
Natural enchilada sauce
Hubby just sauteed it all up in a pan, let the flavors seep in, then we put the meat on a bed of organic salad and topped with guacamole, sour cream and shredded cheese

For Paleo friends, the dairy will freak you out. However, I am not cutting out dairy, just the grains. It was an amazing dinner!

June 4, 2010 Dinner




Tonight we had giant T-bone steaks!! Yummm. Hubby and I have been sharing the duties so I picked up the steak and he made them. I made coarsely mashed cauliflower with cream and butter.

The photos of the food look gross, but it was actually good! The cauliflower probably needed to be cooked on the stove with the cream and butter, but I just mashed everything in a bowl when it was done. It was kind of runny; I highly suggest cooking it on the stovetop or even baking it with cheese on top. Yummm. If anyone else has done this side dish and have suggestions, please post!

All in all, this was a great meal. Not strictly Paleo, but there were no grains and no sugar, so we can't complain. I think we may have brownies for dinner...

June 3, 2010 Dinner


Okay, friends. I cooked with the husband today because I didn't wake up from my nap until 7pm...okay, let's get past that.

We made this really, really simple broccoli and chicken casserole. If you can believe it, it is basically condensed cream of mushroom soup, chicken, broccoli, mayonnaise and cheese. Chuck made the chicken, and I mixed together the soup and mayonnaise. :)

It was pretty good, actually, for an extremely simple meal. Nothing special at all, and I will use it again when I am in a pinch. The only issue I had with the recipe is that the cream of mushroom soup has wheat in it. It was so easy to make, though.

Am looking at recipes for tomorrow night's meal. I thought the hubbyy would be easier to cook for, but he has been giving me the business!

Me? Cook??


Hey, Friends!

If you know me, you know I do not cook. Lately, I've been feeling really guilty about not cooking dinner for my family. With all the processed foods out there, I feel that I am shirking my duties. Therefore, I am going to start cooking - or trying to - and chronicling it here.

Would you please help me by sending me or posting recipes for me to use? Please make them fairly simple so I can actually attempt them. I may not try them all, but the ones I do will be photographed and critiqued. Let's make me a cook!!
