June 7, 2010 Dinner - Enchilada Salad!


Dinner was freaking awesome tonight! Recipe was super simple:

Natural Ground Beef (not grass fed, but had no hormones or antibiotics)
Diced onion, diced green pepper
Natural enchilada sauce
Hubby just sauteed it all up in a pan, let the flavors seep in, then we put the meat on a bed of organic salad and topped with guacamole, sour cream and shredded cheese

For Paleo friends, the dairy will freak you out. However, I am not cutting out dairy, just the grains. It was an amazing dinner!

  3. Here is one Clare that is super good.

    One large eggplant slice long
    Egg whites
    Almond flour
    Salt, pepper, garlic powder
    good quality organic store bought marinara sauce
    mozzarella cheese (not paleo but a little in moderation...)
    olive oil

    preheat oven to 400 degrees. coat the bottom of a sheet pan with olive oil. take sliced eggplant and run through egg whites until coated. Once coated in egg whites sprinkle with a small amount of almond flour (not too heavy) and the salt, pepper and garlic powder. Place on cooking sheet and then mist with olive oil spray on top side. Bake in oven for 30 minutes or until eggplant has a golden color. Spoon marinara over top of eggplant and top with cheese. Bake an additional 3 to 5 miinutes until cheese melts. Serve with salad. You can also make this with chicken rather than eggplant.
